Add the cubes of firm tofu and coat. Place into the air fryer and cook for
10 minutes, then stir and cook for a further 10 minutes or until crispy.

Add the peanut butter, soy sauce , lime juice, maple syrup, sesame oil, garlic, ginger, and sriracha sauce to a bowl. Mix well then drizzle onto the noodle salad and toss slightly to coat.

For the salad, place the rice noodles into a bowl and cover with boiling water until soft. Drain and rinse under cold water then set aside.
