To the garlic and onion mixture, add the canned tomatoes and water and bring the mixture to a boil. Let it simmer for 10 minutes.
Once the base has simmered, stir in the drained and rinsed beans along with the lemon juice and zest. Add the spinach and let it wilt with the heat of the stew.
