Hand chop chocolate to create different texture of chocolate chunks throughout the cookie. Crumble graham crackers leaving large chucks for added crunch.
1 Prep ingredients

Cream together butter and sugar for about 3-4 minutes until the mixture looks light, fluffy, and pale in color.
2 Cream butter & sugar

Mix in dry ingredients until just combined, the dough should look “shaggy”. Then, stir in chocolate and graham cracker crumbs.
3 Add dry ingredients

Using a cookie scoop, portion out cookie dough—cover and place dough in the refrigerator for a minimum of 1 hour. Don't skip the chill time.
4 Scoop & chill dough

Bake for 12-13 minutes. Half way through add marshmallows to the top of each cookie, then return to finish baking until edges are golden brown.
5 Bake at 375°
